Marbling in Wagyu beef and why it’s important

If you’re newer to the world of Wagyu beef, you may wonder what sets this red meat apart from all the rest. Japanese Wagyu, and Japanese A5 Wagyu in particular, earned its reputation as the world’s best steak because when it comes to the ribbons of fatty marbling that give beef it’s flavor, no other cows in the world produce the amount of intramuscular marbling like the cows used in Wagyu beef production. 

What’s interesting about Japanese Wagyu beef, is that the very same marbling that gives Wagyu its silky flavor also provides heart-healthy omega-6 and omega-9 fatty acids, and monounsaturated fatty acids. The health benefits associated with these healthy fats help everything from cardiovascular health, to regulating blood sugar, and helping lower cholesterol. Early studies are even underway to assess the benefit that eating Wagyu beef has on cancers like prostate cancer and breast cancer.

 

How does eating Wagyu beef translate into health benefits?

A recent study showed that both Wagyu and Hanwoo beef, each of which contains high amounts of marbling contents, also contain high amounts of monounsaturated fatty acid, or MUFAs. Unlike trans fat or saturated fat, monounsaturated fats work to reduce bad cholesterol in your blood. Lowering bad cholesterol levels can reduce the risk of heart disease and stroke in those at risk of cardiovascular diseases.

Monounsaturated fats are considered “heart-healthy” fat because not only do they lower (LDL)-cholesterol, but the oils in these fats provide Vitamin E, which is an essential antioxidant. Vitamin E is the vitamin that helps your body’s cells maintain develop and grow.

 

 

Omega-3 and omega-6 fatty acids

According to Harvard Medical School, omega-6 fatty acids, “Help protect the heart from lapsing into potentially deadly erratic rhythms. They ease inflammation. They inhibit the formation of dangerous clots in the bloodstream. They also lower levels of triglycerides, the most common type of fat-carrying particle in the blood.”

The omega-3 and omega-6 fatty acids in Wagyu beef add the same health benefits to the body that the fatty acids in fish like salmon, sardines, mackerel and anchovies.

A study by the American Heart Association also found that patients who substituted saturated fats with omega-6 fats, cut their risk for chronic coronary conditions and heart attacks by 24%!
